Berry Chicken Salad Recipe

Sometimes for dinner, I just need something light, quick, and refreshing. That’s where this berry chicken salad comes in. It’s so simple yet so full of flavor. Pair it with a nice balsamic vinaigrette, I prefer a nice homemade honey balsamic and viola dinners served. It’s a go-to for me when I just don’t feel like cooking and even though it’s called a berry chicken salad it pairs well with shrimp, salmon, tilapia doesn’t matter.

You will see that I actually ate mine with shrimp while my husband had chicken because he doesn’t like seafood. He’s totally missing out but his loss more for me. Also feel free to add any berries you like also apples go really well too, almost like you are eating a chick-fil-a market salad just with a few extras. I just happened to use what I had on hand that night. Now I used 2 different kinds of cheese just because I am a cheese lover I can just sit and eat cheese all day. You definitely don’t have to use two kinds of cheese I just prefer the more cheese the better. Okay now that that’s cleared up let’s get right into it.

Ingredients:

  • romaine lettuce

  • Spinach

  • Kale

  • Strawberry’s

  • Blueberries

  • Sliced Almonds & dried cranberries

  • Feta cheese

  • Parmesan cheese

  • Avocado

  • Red onion

  • Croutons

  • 2 Chicken breast

Directions:

  1. First, wash and chop up all of your lettuce, kale, and spinach and place in a bowl.

  2. Then wash and chop up your strawberries place in the bowl and add a handful or two of blueberries.

  3. Next chop up 1/4 of a red onion and place in a bowl. 

  4. Next, chop up your avocado you can use the whole thing, I only used half because my husband doesn’t really like avocado.

  5. Take a handful of the candied pecans & dried cranberries and sprinkle into a bowl. I bought mine already prepackaged it’s just convenient but by all means, make them yourself if you want.

  6. Then add your croutons, Feta, and Parmesan cheese.

  7. Now season your chicken to taste, I used my usual’s garlic powder, onion powder, paprika, Tony Chachere's, and blacked chicken seasoning.

  8. Then heat up a skillet with a little bit of butter & olive oil. Cook chicken until tender and juicy.

  9. Remove chicken from skillet and chop placing it in the bowl.

  10. Top with your choice of dressing and mix.

  11. Enjoy!
